Spinach and Pecan Salad with Lemon Dressing
The lemon dressing in this salad keeps spinach greens fresh while packing in a fresh acidity sure to excite your tongue.
1½ pounds fresh spinach, cleaned and trimmed
½ cup of pecans, chopped (may also use pecan halves)
1 clove garlic (minced)
1 teaspoon sugar
1 lemon rind, grated
½ teaspoon salt
¼ teaspoon pepper
3 tablespoons lemon juice
3 tablespoons fat free sour cream
½ cup oil
- Blend all ingredients except spinach for 15 seconds. Toss with spinach and serve.
