Pecan Pork Roast

Pecans make a wonderful coating for pork, by pairing their robust flavor with the pork’s gentle attributes, while the added orange marmalade gives a great balance uniting the two.  

Ingredients

3 pounds pork tenderloin

½ cup onion, chopped

2 tablespoons olive oil

¼ cup chopped pecans

¼ cup orange marmalade

 

Directions

  1. Saute onions in olive oil until soft.
  2. Add pecans and marmalade; stir.
  3. Cover roast with topping
  4. Bake at 300°-325°, 45 minutes per pound.
