Hazelnut Fig Twists

These simple pastry puffs are coated in blue cheese and toasted hazelnuts.

Ingredients

1 (17.3 ounces package) frozen puff pastry, thawed

1 egg, beaten

1 tablespoon cold water

¾ cup preserve (recipe below)

¾ cup blue cheese, crumbled

1¼ cups hazelnuts, toasted, skin removed and diced, divided

PRESERVE:

2 tablespoons chopped shallots

1 tablespoon butter

¾ cup chopped dried mission .gs

½ cup ruby port

½ teaspoon dried thyme

Directions

  1. Preheat oven to 400°F.
  2. Place pastry sheets on lightly .oured work surface. Beat egg and water; set aside.
  3. Spread .g preserve evenly over one pastry sheet. Sprinkle blue cheese and ¾ cup hazelnuts over preserve. Place second pastry sheet over hazelnuts.
  4. Brush top of pastry with beaten egg. Sprinkle with ¼ cup chopped hazelnuts and press into pastry. Turn pastry over and repeat with beaten egg and remaining nuts. Pastry should measure 9x12-inches.
  5. Cut pastry into ½-inch strips across shortest width. Twist and arrange on greased baking sheet.
  6. Bake at 400°F for 15 minutes or until risen and golden. Remove to wire rack and cool.

 

TO MAKE PRESERVE:

  1. Sauté 2 tablespoons chopped shallots in 1 tablespoon butter until softened
    but not browned.
  2.  Add ¾ cup chopped dried mission .gs, ½ cup ruby port and ½ teaspoon dried thyme. Simmer gently for 5 to 7 minutes or until .gs are tender and most of liquid is absorbed. Cool.
  3. Blend in food processor to rough paste. Makes ¾ cup.
