A quick, yet delicious creation. The chicken is easily seared on the grill and then topped off with a dollop of Greek yogurt, shredded cucumbers and chopped pistachios.
CHICKEN:
4 boneless, skinless chicken breast halves (6 ounces each)
1 tablespoon olive oil
1 tablespoon freshly squeezed lemon juice
1 teaspoon dried oregano
1 clove garlic, minced
½ teaspoon salt
¼ teaspoon freshly ground black pepper
YOGURT CHEESE:
1¼ cups fat-free Greek-style yogurt
½ cup shredded cucumber
1 teaspoon chopped fresh dill
2 cloves garlic, minced
½ cup shelled pistachios, coarsely chopped, divided
